2020 Wild Abandon Pét Nat Sauvignon Blanc
Pétillant Naturel wines, pét nat for short, are fizzy wines created by completing primary fermentation in the bottle, trapping the CO2 given off by yeast as they convert sugar into alcohol. Due to fermentation occurring in the bottle, pét nat wines are low intervention wines that can be lightly cloudy or contain tartrates. The wines are unfined and unfiltered, though these were disgorged. It is recommended the bottles are stored and chilled in the upright position and that you crack the crown cap to off gas any excess CO2 before opening the bottle completely. Due to the wild nature of our product, sediment may accumulate in the bottom of the bottle.
The Wild Abandon Pét Nat of Sauvignon Blanc presents with an intoxicating medley of ripe fruits and aromas of honeysuckle. The palate reveals pears poached in honey syrup, lemon meringue and, depending on what you’re enjoying it with, a hint of guava.
