What is Pét Nat?
Pétillant Naturel wines, pét nat for short, are fizzy wines created by completing primary fermentation in the bottle, trapping the CO2 given off by yeast as they convert sugar into alcohol. These wines are deliciously crisp and bubbly with bright fruit characteristics made from our Yountville Vineyards.
Due to fermentation occurring in the bottle, pét nat wines are low intervention wines that can be lightly cloudy or contain tartrates. The wines are unfined and unfiltered, though these were disgorged. It is recommended the bottles are stored and chilled in the upright position and that you crack the crown cap to off gas any excess CO2 before opening the bottle completely. Due to the wild nature of our product, sediment may accumulate in the bottom of the bottle.

The Wild Abandon Pét Nat of Pinot Noir Rosé is a lightly fizzy, lower alcohol wine with hints of raspberries, pink grapefruit, and charred citrus rind. The wine spent ten months on the lees, evolving the ripe fruit flavors into the savory brioche overtones more common in champagne. The Wild Abandon Pét Nat of Sauvignon Blanc presents with an intoxicating medley of ripe fruits and aromas of honeysuckle that our Yountville vineyards perfect. The palate reveals pears poached in honey syrup, lemon meringue and, depending on what you’re enjoying it with, a hint of guava. Crafted by our proprietor Doug Hill and his wife Leslie, Wild Abandon wines were born out of our desire to experiment, to see what would happen if we farm naturally, ferment differently, play with unexpected blends, test out lower intervention wine-making techniques. With Wild Abandon we take calculated risks to make wines that are a little out of the ordinary, but wines that we enjoy drinking ourselves, and hope others will too.
